It's been about 4 weeks now since hubby and I have committed to planning a weekly menu and having the family eat together 5 nights a week (Sunday-Thursday). It has been GREAT sitting down to dinner with the boys; they love it to. They look forward to it, and when we started they would ask, "Do we GET to sit down at the table together again tonight?"
So, since this a regular thing now, I thought I would post each week about our planned menu (partly as a way to get me to post regularly also). If we have something particularly yummy, I'll post the recipe (all meals will be relatively easy to cook with a minimal number of ingredients) and a review. Must give props to the hubby who actually ends up cooking most of the time as I don't get home from work until about 6:00.
Menu for week of 9/24 - 9/28:
Sunday - Baked rigatoni with Italian sausage, garlic bread and tossed salad
Monday - Caramelized garlic chicken, green beans
Tuesday - Crockpot BBQ'd beef sandwiches, tater tots (or chipolte fries from Trader Joe's)
Wednesday - Orange chicken and fried rice (both from Trader Joe's)
Thursday - Pasta beef satay (veggies TBD)
Wednesday, I have a post-work meeting and book club, so planned for the hubby to just have to do a frozen food from TJ's night to make it easier on him).
Props to my new cookbook, Saving Dinner by Leanne Ely, host of SavingDinner.com. We have found some great recipes in there so far. This week Monday, Tuesday and Thursday's recipes are coming straight from the book.
