I seem to be falling off the wagon here with the holiday season in full gear. Haven't done real meal planning in weeks. This week is no different. Darren has a basketball game or practice EVERY night this week and we are trying to recover from our party while also getting caught up on stuff we have neglected over the past week.
So here is what we have going this week:
Sunday 12/3: fried eggs, cheese and bacon on croissants (left over from party)
Monday 12/4: Party leftovers (falafel, pizza, taquitos, lasagna etc.)
Tuesday 12/5: Take out...El Matate taquaria
Wednesday 12/6: Butter Nut Squash Ravioli and bread
Thursday: I have no idea
So much for planning...you know how it is...getting through the week.
I don't do butternut squash but otherwise, it sounds delicious. I love the eggs and croissant--like a breakfast sandwich.

Thank GOD for leftovers. I have been living off of my leftovers or panera for the last week during my final week of classes. I usually scoff leftovers, but when you don't have time but you have a microwave...its a godsend.

Baked beans on whole wheat toast. A vegetarian meal, very English. Also very simple.
A great meal when Dad's out of town, too.

i know this comes a bit late, but an omelette with salad, bread and a glass of white wine makes a great--and easy--dinner!
